Delicate manual labour, unchanged for hundreds of years—that’s how coarse-grained sea salt is harvested.

It crystallizes on the surface of special pools called salt pans, where ocean water is directed and enclosed. Under the influence of sun and wind, water slowly evaporates, and salt crystals form on the surface.

The resulting crystals are collected by hand, without any technological interference, using only long wooden rakes. As a result, the structure of the salt remains consistent, and the salt itself is perfectly pure and of the highest quality.

Similar to Kampot pepper, harvesting and processing of sea salt are managed by small individual farms. Farmer families pass the tradition of sea salt production from generation to generation. Thus, the salt is of absolute organic quality, without the need for any subsequent refining. And, just like with pepper, we buy salt directly from these farmers to ensure they receive fair compensation for their hard work.

Usage

Thanks to its rapid absorption, it is ideal for any type of meat processing, e.g. koshering.

Thanks to its excellent adhesion and aesthetic perfection, it is widely used for the final seasoning of dishes, whether it’s carpaccio, caramel, or chocolate desserts.

The tradition of harvesting sea salt in this region is as deeply rooted as pepper cultivation. Conditions here are absolutely ideal. Intense sunshine, ocean breeze, and pleasant climate have encouraged salt farming and ocean salt harvesting for hundreds of years. In terms of quality, it can rival sea salt from the most renowned regions of France or Portugal.

Thanks to the used materials and special sealing technology of the pouches, no air or moisture gets to the salt.
